Recipe Lab - Giant Cookie
Welcome to Recipe Lab: where either myself or my brother attempt a fun vegetarian/vegan recipe, whether it be healthy or in this case, decidedly unhealthy. As I had recently graduated from Zoom university, I decided to make myself a cookie as a treat. However, this was no ordinary cookie, the cookie I chose to make was more like a pie cooked in a 12-inch cast-iron skillet. I’ve been fascinated with skillet cookies ever since a trip to Los Angeles when my friend Erin took me to try something called a pizookie. Since then, this concept has been itching in the back of my head.
Nearly three years later, after improving my cooking skills, I was finally able to muster up the courage to attempt this delightfully unhealthy treat. I used a recipe from justataste.com as their method was explicitly designed for a 12-inch cast-iron skillet. One thing that immediately struck out in this recipe was the hilarious amount of butter, sugar and chocolate chips that went into this dish.

Thanks to the help of my mum's kitchen aid, making the cookie dough for this recipe was incredibly easy, and soon I constructed the cookie pie. After about 30-35 minutes in the oven, the cookie pie came out looking just as I imagined. It was sticky and gooey in the middle with a beautiful crunchy base. It paired well with the freshly bought vanilla bean ice cream I acquired from the store.

I would highly recommend this recipe for a celebratory occasion. The amount of butter, sugar and chocolate is hilariously sinful and not something recommended as a daily meal.
